Instructions

  • Whisk cottage cheese, yoghurt and erythritol together until mixture is smooth and erythritol is dissolved.
  • Add lemon juice and mix.
  • Mix gelatine with water and allow to stand for 5 minutes.
  • Heat in microwave for 20 seconds and stir until gelatine is melted.
  • Grease your dish and line bottom with coconut biscuits.
  • Keto Swap Tip: To make this strict Keto, swap the coconut biscuit base for an almond-flour & butter press-in crust (or skip the base entirely for a crustless fridge mousse tart)!
  • Add melted gelatine mixture to cottage cheese mixture and mix through.
  • Gently pour into prepared dish, being careful not to move the biscuits too much.
  • Place in fridge for 4 - 6 hours or overnight until set.
  • Mix strawberry jam with a little water until smooth and spread over tart when ready to serve.
  • Decorate with sliced strawberries and enjoy!
