High protein, healthy recipes using affordable, local South African ingredients to protect lean mass and support your GLP-1 weight loss journey.
Breakfast on a GLP-1 medication journey is often the hardest meal of the day. You know you need high-quality protein first thing in the morning to fuel your energy, preserve lean muscle, and keep your metabolism firing, but facing a giant plate of food when your appetite is virtually gone can cause instant food fatigue.
Many high-protein omelette recipes call for 3 or 4 whole eggs, mounds of melted cheese, or dry egg-white cartons. While the protein looks great on paper, it often ends up being too dense, overly high in fat, and impossible to finish in one sitting without mild nausea or heavy reflux.
This 2-Egg High-Protein Omelette solves that exact problem:
- Manageable Plate Volume: By scaling down to 2 whole eggs, the portion remains light, approachable, and easy to finish without discomfort.
- The Cottage Cheese Protein Hack: Instead of heavy cream or excessive cheese, we tuck ⅓ cup of Smooth Low-Fat Cottage Cheese inside. As it warms under the lid, it melts into a velvety, creamy centre that boosts the dish to 29g of complete protein – covering nearly a third of your daily goal before your morning workday even begins!
- Gentler on Digestion: Using a targeted 30g of sharp mature cheddar keeps the decadent, comforting cheese pull while keeping total fat around 24g, preventing the delayed-gastric-emptying heaviness common with high-fat breakfasts.
- Under R20 a Plate: Made with everyday local staples from Checkers, Pick n Pay, or Spar, this breakfast comes in at just ~R18.40, proving high-density nutrition doesn’t require expensive specialty items.
Why we love this
- Manageable Plate Volume: On GLP-1 medications, volume fatigue is real. A 3-egg omelet with cheese and curds is dense and can feel daunting to get through, whereas a 2-egg fold is light, fast to cook, and easy to finish without discomfort.
- Hitting the Target: Even scaled down, 29g of complete protein covers nearly a full third of an average daily target (around 90g–100g) in a single, compact breakfast.
- Pan Size Tip: For a 2-egg omelet, use a 20 cm (8-inch) non-stick frying pan instead of a 23–25 cm pan so the egg layer stays thick enough to fold over the cottage cheese without tearing.

Ingredients
- 2 large eggs
- ⅓ cup low-fat cottage cheese (80g), smooth or chunky
- 30 g Mature Cheddar, finely grated
- pinch of fine salt and freshly cracked black pepper, to taste
- cooking spray or ½ tsp olive oil / butter for the pan
Instructions
- Whisk & Season: In a small bowl, crack the 2 eggs, season with a pinch of salt and black pepper, and whisk vigorously with a fork until frothy and uniform.
- Heat the Pan: Heat a 20 cm non-stick frying pan over medium heat. Lightly grease with cooking spray or a touch of oil.
- Pour & Set Base: Pour the whisked eggs into the hot pan, tilting slightly so the egg covers the surface evenly. Let it cook undisturbed for 30 to 45 seconds until the base begins to set.
- Add the Cottage Cheese Layer: Spoon the cottage cheese in an even layer across just one half of the omelette. Cook for another 1 to 2 minutes until the edges are firm and the top is almost set.
- Fold & Melt: Gently loosen the empty side of the omelette with a spatula and fold it directly over the cottage cheese half. Turn the heat down to low, pop a lid or plate over the pan, and let it cook for 1 to 2 minutes. The trapped steam gently warms and melts the cottage cheese into a velvety, creamy filling.
- Top & Serve: Slide the omelette onto your plate, immediately scatter the grated cheddar over the warm top so it melts into the crust, and enjoy hot!
Baker's Tip: If you prefer a completely smooth texture without curd flecks, blitz the cottage cheese with a fork or mini-blender before adding it to the pan
