The Comfort of Warm Naan Without the Heavy Bloat
When pairing Indian dishes like our Creamy High-Protein Butter Chicken, traditional restaurant garlic naan can be surprisingly tough on a GLP-1 journey. Traditional commercial flatbreads are often made with excess ghee, butter, and refined sugars, sitting like a heavy brick in a slower-emptying stomach.
On the other hand, skipping the bread altogether when your family is happily scooping up sauce can feel restrictive and unsatisfying.
This High-Protein Cottage Cheese Naan is a kitchen game-changer:
- No Yeast, No Proofing: Made in minutes with everyday self-rising dough principles using plain bread flour and baking powder.
- Stealth Casein Protein: We use Smooth Low-Fat Cottage Cheese directly in the dough. It replaces yogurt and oil completely, yielding a pillowy, tender crumb with zero sour tang and ~8g of bioavailable protein per naan.
- One Pan for Everyone: You can enjoy one warm naan alongside your chicken for a controlled carb portion, while your kids and partner can eat two or three straight from the hot skillet!

2-Ingredient Protein Naan Bread
This quick 20-minute stovetop naan bread requires zero yeast proofing, no special equipment, and minimal kneading. Just mix everyday flour, baking powder, and smooth cottage cheese, roll out, and sear in a hot cast-iron pan for 60 seconds per side! Delivers 9g of protein per naan for a fast, wholesome dinner side the whole family will love.

Ingredients
- 2 cups white bread flour (260g), bread flour gives a chewier, authentic stretch than cake flour
- 1 cup low-fat cottage cheese (240g), used directly from the tub at room temperature
- 1 ½ tsp baking powder, gives the signature high-heat bubbles and pillowy air pockets
- ¼ tsp salt, optional ,as cottage cheese has natural saltiness
- ¼ cup water or skim milk, divided into 2 Tbsp increments
Finishing / Aromatics (Optional):
- 1 clove fresh garlic, finely minced
- 2 tbsp fresh coriander (dhania), chopped
- 1 tsp melted butter or light margarine, for brushing after cooking
Instructions
- Form the Shaggy Dough: In a medium bowl, whisk the bread flour, baking powder, and salt. Add the smooth cottage cheese. Stir with a wooden spoon or spatula until large, crumbly clumps form.
- Knead to a Soft Dough: Add 2 tablespoons of water and begin bringing the dough together with your hands. Add the remaining 1 - 2 tablespoons of water slowly, kneading in the bowl for 2 to 3 minutes until a soft, smooth dough ball forms that leaves the sides of the bowl clean. Let it rest on the counter for 5 minutes while you heat your pan
- Preheat the Skillet: Place a heavy cast-iron skillet (or heavy-bottomed frying pan) over medium-high heat for 6 - 8minutes until very hot. A properly preheated pan is the secret to instant bubble pockets without drying out the bread.
- Divide & Roll: Turn the dough onto a lightly floured board. Divide into 6 equal pieces (about 80g - 85g each) and roll each into a ball. Using a floured rolling pin, roll each ball out into a rustic teardrop or oval about 5mm (¼ inch) thick. Brush the top surface lightly with a thin glaze of water.
- Sear & Bubble: Lay the rolled dough water-side down directly onto the dry, hot skillet. Immediately scatter your minced garlic and fresh coriander on the exposed top side, pressing them down gently with a spatula so they stick.
- Cook: Cook for 60 to 90 seconds until large blister bubbles form across the surface and the underside shows deep golden charred spots.
- Flip & Finish: Flip the naan over and cook the seeded/garlic side for another 45 to 60 seconds until lightly charred and cooked through. Remove from the pan, immediately brush with a light dab of melted butter if desired, and wrap in a clean tea towel to keep warm and soft while you cook the rest.
