High Protein South African Brekkie Skillet

The Classic Sunday Brekkie, Leaned Out for Gentle Digestion

There is nothing quite like waking up on a weekend morning to the sizzle of bacon and eggs in a hot pan. But traditional café “big fry-ups” or greasy hotel buffet plates – piled high with oily pork sausages, fried bread, and fatty streaky bacon – can trigger severe nausea, reflux, and sluggish food fatigue when your stomach is emptying at a GLP-1 pace.

When your morning appetite is blunted, you don’t want a heavy, grease-laden plate, but skipping breakfast entirely often leads to energy slumps and missed daily protein goals.

This High-Protein South African Brekkie Skillet reimagines the classic fry-up into a clean, low-fat, digestion-friendly plate!

By choosing extra-lean back bacon (trimmed of fat) instead of fatty streaky rashers and pan-frying your eggs in a light mist of cooking spray, we keep the fat low while preserving every gram of rich, satisfying flavour. We round off the plate with a portion of classic tomato-sauce baked beans (like Koo or supermarket house brands) to deliver complex, slow-release carbohydrates and prebiotic dietary fibre that naturally supports gut motility.

Paired with a freshly brewed cup of black coffee, this entire plate packs nearly 31g of complete protein for under R25 – taking only 12 minutes on the stove using basic local pantry staples!

Why It Fits the Mzansi Lekker & Lean Plate

  • Lean Protein First: Two large eggs paired with lean back bacon deliver a high concentration of bioavailable amino acids to protect lean muscle mass and kickstart your day.
  • Gut-Supportive Fiber: Baked beans provide gentle, slow-burning complex carbs and soluble fibre, which help keep your digestive tract moving smoothly while on weight-loss medications.
  • No Separate Cooking: Your partner or kids can toast a couple of thick slices of white bread or add breakfast bangers to their plates, while your portion stays lean, satisfying, and perfectly portioned without needing two different meals.
  • Everyday Supermarket Simplicity: Every single ingredient is a standard, budget-friendly staple you can pick up on a quick dash through Checkers, Pick n Pay, Spar, or Woolies.

High-Protein South African Brekkie Skillet (2 portions)

A traditional fry-up is often loaded with oily pork biltong/sausages and swimming in butter, which can trigger severe nausea and reflux on GLP-1 medications.
This version uses lean back bacon (trimmed of outer rind/fat) and stretches the protein and prebiotic fibre using classic Baked Beans in Tomato Sauce. Cooking everything in one non-stick pan using cooking spray keeps total fat down, eliminates food fatigue, and protects your lean muscle with over 30g of complete protein per plate.

Instructions

  • Crisp the Bacon: Spray a large non-stick frying pan with cooking spray and place over medium-high heat. Add the trimmed back bacon rashers and fry for 3 to 4 minutes per side until golden and crisp. Transfer the bacon to a plate and cover loosely with foil to keep warm.
  • Warm the Beans: In a small pot over medium heat (or in a microwave-safe dish for 90 seconds), gently warm the can of baked beans until heated through. Keep warm on low.
  • Fry the Eggs (Sunny-Side or Over-Easy): Wipe out any excess bacon grease with a paper towel if needed to keep the fat low. Reduce heat to medium, mist the pan lightly with cooking spray, and crack in the 4 eggs. Season immediately with Ina Paarman’s Seasoned Sea Salt and cracked black pepper. Cook for 3 to 4 minutes until the whites are fully set but the yolks remain jammy and runny.
  • Plate & Serve: Divide the warm baked beans evenly between two plates. Place 2 fried eggs and 3 rashers of bacon alongside the beans on each plate. Garnish with a sprinkle of fresh parsley or chives and serve immediately.
