High protein, healthy recipes using affordable, local South African ingredients to protect lean mass and support your GLP-1 weight loss journey.
The 8-Minute High-Protein Workday Lunch
When your appetite is blunted from GLP-1 medication, mid-day food fatigue is a very real challenge. The thought of heating up a heavy, greasy lunch or forcing down a giant plate between busy meetings can make you want to skip eating altogether. But skipping lunch leaves you fatigued, stalls your metabolism, and risks muscle loss.
This High-Protein Boiled Egg & Avocado Toast is the ultimate quick, low-volume lunch solution!
Instead of plain mashed avocado – which is packed with healthy fats but low in protein – we use a simple local kitchen hack: whisking in a tablespoon of Smooth Low-Fat Cottage Cheese. It acts just like sour cream, lightening the avocado into a fluffy, silky spread that glides down easily without feeling heavy on a slow-emptying stomach, while sneaking in extra pure protein.
Crowned with a jammy boiled egg and a zesty squeeze of lemon, this satisfying desk lunch takes less than 10 minutes to make, costs under R15, and gives you lasting, steady energy to power through your afternoon!
Mzansi Pro-Tips:
- Why Jammy Yolks Matter: When appetite suppression causes mild dryness or swallowing fatigue, a soft, jammy yolk provides natural moisture, making the toast significantly easier and more enjoyable to eat than a dry, powdery hard-boiled egg.
- Meal Prep Hack: Boil 4 to 6 eggs on Sunday evening and store them unpeeled in an airtight container in the fridge for up to 5 days. When lunchtime hits, your toast comes together in just 2 minutes!
- Flavour Twists: Swap chilli flakes for Ina Paarman Garlic & Herb, or add a tiny sprinkle of toasted pumpkin or sesame seeds for an extra nutty crunch!
- Protein Pro-Tip: Want to push this to ~19g of protein? Simply boil a second egg and layer both onto your toast!

Boiled Egg & Avocado Toast
Ingredients
- 1 slice Earth Origin High Protein Grain Bread
- 1 large egg, room temperature
- ¼ medium ripe avocado (~50g), peeled and pitted
- 1 tbsp low-fat cottage cheese
- 1 tsp fresh lemon juice (5ml), (keeps the avocado vibrant green and cuts the richness)
- pinch Ina Paarman’s Seasoned Sea Salt, or Garlic & Herb seasoning
- pinch dried chilli flakes or freshly cracked black pepper, to taste
Instructions
- Boil the Egg (To Jammy Perfection): Bring a small pot of water to a gentle rolling boil. Carefully lower in the egg using a spoon. Boil for 6½ to 7 minutes for a tender white with a rich, jammy yolk (or 8 - 9 minutes for fully hard-boiled). Immediately transfer to a small bowl of cold water to stop the cooking and make peeling effortless.
- Toast the Bread: Pop your seeded or low-GI bread slice into the toaster until golden and sturdy enough to hold the toppings.
- Whip the Avocado Spread: In a small ramekin or bowl, mash the ripe avocado with a fork. Add the tablespoon of smooth cottage cheese, lemon juice, and a pinch of Ina Paarman Seasoned Sea Salt. Stir vigorously until smooth, creamy, and mousse-like.
- Assemble & Slice: Spread the whipped avocado-cottage cheese mixture generously over the warm toast slice. Peel the boiled egg, slice it into rounds or halves, and arrange neatly across the avocado spread.
- Garnish & Enjoy: Finish with a sprinkle of crushed chilli flakes and freshly cracked black pepper for a savoury kick. Serve immediately while the toast is warm and crisp!
